2 ½ cups all-purpose flour

1 tsp salt

1 tsp sugar

1 cup unsalted butter, cold and cubed

6 to 8 tbsp ice water

6 to 8 cups Granny Smith apples, peeled, cored, and sliced

¾ cup granulated sugar

2 tbsp lemon juice

1 tsp ground cinnamon

¼ tsp ground nutmeg

2 tbsp all-purpose flour (for the filling)

1 egg (for egg wash)

1 tbsp milk (for egg wash)

Instructions
 

Prepare the Pie Crust: In a large mixing bowl, whisk together the flour, salt, and sugar. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until a dough forms. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least one hour.

    Make the Apple Filling: In another large bowl, combine the sliced apples, granulated sugar, lemon juice, cinnamon, nutmeg, and flour. Toss until the apples are well coated. Let the mixture sit for about 15 minutes to allow the flavors to meld.

      Preheat the Oven: Preheat the oven to 425°F (220°C).

        Roll Out the Dough: On a lightly floured surface, roll out one disc of dough into a circle large enough to fit into a 9-inch pie plate. Carefully place the dough into the pie plate.

          Fill the Pie: Pour the apple filling into the prepared crust, spreading it evenly.

            Top Crust: Roll out the second disc of dough and place it over the filling. Trim any excess dough and pinch the edges to seal. Cut small slits in the top crust to allow steam to escape.

              Egg Wash: In a small bowl, whisk together the egg and milk. Brush the egg wash over the top crust for a beautiful golden finish.

                Bake: Bake the pie in the preheated oven for 15 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes, or until the apples are tender and the crust is golden brown. Check occasionally; if the edges brown too quickly, cover them with foil.

                  Cool: Remove the pie from the oven and allow it to cool for at least 2 hours before slicing, as this helps the juices set.
