Grandma's Ground Beef Casserole

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 can (15 oz) diced tomatoes, undrained

1 cup cooked rice (white or brown)

1 can (15 oz) kidney beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup sour cream (optional) for serving

Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes. Drain any excess fat.

      Sauté the Vegetables: Add the diced onion and bell peppers to the skillet with the beef. Sauté for about 4-5 minutes until the onions are translucent. Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Stir in the diced tomatoes, cooked rice, kidney beans, corn, cumin, smoked paprika, oregano, salt, and pepper. Mix until everything is well combined. Cook for another 2-3 minutes to heat through.

          Transfer to Baking Dish: Pour the ground beef mixture into a greased 9x13-inch baking dish and spread it out evenly.

            Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and slightly golden.

                Serve: Remove the casserole from the oven and let it cool for about 5 minutes. Serve warm with a dollop of sour cream, if desired, and garnish with fresh parsley.
