Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup granulated sugar

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk (or milk with 1 tablespoon vinegar or lemon juice added)

1 large egg (optional, for egg wash)

Extra melted butter for brushing on top

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.

Cut in the Butter: Add the cubed cold butter to the flour mixture. Using a pastry cutter, fork, or your fingertips, gently blend the butter into the flour until the mixture resembles coarse crumbs with some larger pea-sized pieces of butter remaining. This is key for fluffy biscuits!

Add Buttermilk: Make a well in the center of the mixture and pour in the buttermilk. Stir with a wooden spoon or spatula until just combined. Do not overmix; the dough should be slightly sticky but manageable.

Shape the Dough: Turn the dough out onto a floured surface. With floured hands, gently knead the dough a few times until it comes together. Pat or roll the dough into a thickness of about 1-inch.

Cut the Biscuits: Use a floured biscuit cutter, glass, or the rim of a cup to cut out biscuits. Press straight down without twisting for the best rise. Place the biscuits on the prepared baking sheet close together for soft sides or spaced apart for crispy edges.

Optional Egg Wash: If desired, whisk the egg in a small bowl and brush it on top of the biscuits for a rich, golden color.

Bake: Bake in the preheated oven for 12-15 minutes or until the tops are lightly golden.

Brush with Butter: Remove from the oven and immediately brush the tops with melted butter for extra flavor and richness.

Serve Warm: Let the biscuits cool for a few minutes before serving them warm with your favorite jam, honey, or just plain butter.
