For the Greek Chicken:

4 boneless, skinless chicken breasts

3 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

For the Tzatziki:

1 cup Greek yogurt

1 small cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped (or 1 tsp dried dill)

Salt, to taste

For the Couscous:

1 cup couscous

1 ½ cups vegetable or chicken broth

1 tablespoon olive oil

1 teaspoon lemon zest

Salt and pepper, to taste

Fresh parsley or mint, chopped for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.

      - Add the chicken breasts, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for extra flavor).

        Prepare the Tzatziki:

          - In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt. Mix well.

            - Chill in the refrigerator while you prepare the rest of the dish.

              Cook the Couscous:

                - In a saucepan, bring the vegetable or chicken broth to a boil.

                  - Stir in olive oil, lemon zest, couscous, salt, and pepper.

                    - Cover the pan, remove it from heat, and let it sit for about 5 minutes. Fluff with a fork before serving.

                      Grill or Bake the Chicken:

                        - Preheat your grill to medium-high or your oven to 400°F (200°C).
