Greek Orzo Salad

Ingredients
  

1 cup orzo pasta

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

1/4 cup olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Zest and juice of 1 lemon

Instructions
 

Cook the Orzo: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the orzo and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the orzo cooks, chop the cherry tomatoes, cucumber, red onion, and olives. Place them in a large mixing bowl.

      Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon zest, lemon juice, dried oregano, salt, and pepper until well combined.

        Combine Ingredients: Add the cooked orzo to the bowl with the chopped vegetables. Pour the dressing over the mixture and gently toss to combine, ensuring all ingredients are evenly coated.

          Add Herbs and Cheese: Fold in the crumbled feta cheese, chopped parsley, and dill until well distributed throughout the salad.

            Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled or at room temperature, garnished with additional herbs and a sprinkle of feta, if desired.
