1 pound fresh green beans, trimmed

1 pound baby potatoes, halved

6 slices of bacon, chopped

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons freshly grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and boil for about 10-12 minutes until tender. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and drain on paper towels, leaving the bacon fat in the skillet.

      Sauté Green Beans: In the same skillet with the bacon fat, add the minced garlic and sauté for 30 seconds until fragrant. Then, add the trimmed green beans and cook for about 5-7 minutes, stirring occasionally until they are tender yet still crisp.

        Combine Ingredients: Add the boiled potatoes to the skillet with the green beans. Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper. Gently toss everything together and let it cook for an additional 3-4 minutes until heated through.

          Final Touch: Stir in the crispy bacon and cheese (if using) just before serving. Garnish with fresh parsley for a pop of color.
