Green Chili Chicken Pasta Bake

Ingredients
  

2 cups uncooked penne pasta

1 lb boneless, skinless chicken breasts, diced

1 medium onion, chopped

3 cloves garlic, minced

1 cup green chilies, diced (canned or roasted)

2 cups shredded cheddar cheese

1 cup sour cream

1 cup chicken broth

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup fresh cilantro, chopped (for garnish)

Optional: crushed tortilla chips for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta until al dente, according to package instructions. Drain and set aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, cumin, and smoked paprika. Sauté for about 5-7 minutes or until the chicken is cooked through and lightly golden. Remove from skillet and set aside.

        Prepare the Sauce: In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes. Stir in the diced green chilies and cook for an additional 2 minutes.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chicken, onion and chili mixture, sour cream, and chicken broth. Mix thoroughly until everything is well coated.

            Add Cheese: Fold in 1½ cups of shredded cheddar cheese into the pasta mixture, reserving the remaining ½ cup for topping.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish, spreading it evenly and smoothing the top.

                Top with Cheese: Sprinkle the remaining ½ cup of shredded cheddar cheese over the top of the pasta bake. Optionally, add crushed tortilla chips for an extra crunch.

                  Bake: Place the baking dish in the oven and bake for 25-30 minutes or until the cheese is bubbly and slightly golden.

                    Garnish: Remove from the oven and let it cool for about 5 minutes. Garnish with fresh cilantro before serving.
