Ingredients

4 slices of sourdough bread

1 cup fresh spinach

1 medium tomato, sliced

1/2 cup mozzarella cheese, shredded

1/4 cup balsamic vinaigrette

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves (optional, for garnish)

Instructions

Prepare the Ingredients: Start by washing the fresh spinach and slicing the tomato. Set aside.

Assemble the Sandwich: On two slices of sourdough bread, layer the fresh spinach, sliced tomatoes, and mozzarella cheese. Drizzle a tablespoon of balsamic vinaigrette over the cheese and sprinkle with salt and pepper. Top with the remaining slices of bread.

Heat the Grill Pan: In a large skillet or grill pan, heat 2 tablespoons of olive oil over medium heat.

Grill the Sandwich: Once the pan is hot, place the sandwich in the skillet. Grill for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and grill for another 3-4 minutes on the other side, ensuring the cheese is melted and the bread is crispy.

Add Extra Flavor: After grilling, optionally drizzle a little more balsamic vinaigrette on the top slice for added flavor, and garnish with fresh basil leaves.

Serve and Enjoy: Slice the sandwich in half and serve hot. Pair with a side of fresh salad or your favorite chips for a complete meal.
