4 large tortillas (flour or whole wheat)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked and seasoned ground beef or black beans (for a vegetarian option)

1 cup cooked rice (white or brown)

1/2 cup pico de gallo (or diced tomatoes with onion and cilantro)

1/2 cup sour cream

1/4 cup jalapeño slices (optional for an extra kick)

2 tablespoons butter, softened

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Prep the Ingredients: In a bowl, mix the cooked rice with the seasoned ground beef or black beans. Add pico de gallo, jalapeño slices, salt, and pepper. Stir until well combined.

    Layer the Cheese: Take one tortilla and sprinkle a generous layer of both cheddar and mozzarella cheese down the center of the tortilla. Ensure that there’s enough cheese to create a gooey interior.

      Fill the Tortilla: Spoon about 1/4 of the rice and meat/bean mixture over the cheese layer. Drizzle a tablespoon of sour cream over the filling.

        Fold the Burrito: Fold the sides of the tortilla in towards the center, then roll it up tightly from the bottom to the top, sealing in all the delicious fillings.

          Butter the Outside: Spread a thin layer of softened butter on the outside of the burrito to ensure it grills to a golden-brown crisp.
