Grilled Chicken Caesar Pasta Salad

2 cups rotini pasta

2 large chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup romaine lettuce, chopped

½ cup cherry tomatoes, halved

½ cup croutons

¼ cup grated Parmesan cheese

½ cup Caesar dressing (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper. Preheat the grill over medium heat. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the juices run clear. Remove from the grill, allow to rest for a few minutes, then slice into bite-sized pieces.

      Combine the Ingredients: In a large mixing bowl, combine the cooked pasta, grilled chicken, chopped romaine, halved cherry tomatoes, croutons, and grated Parmesan cheese.

        Dress the Salad: Drizzle the Caesar dressing over the pasta mixture and toss gently until everything is well-coated. Adjust salt and pepper to taste.
