Grilled Chicken Pineapple Quesadillas

2 cups cooked chicken breast, shredded

1 cup fresh pineapple, diced (or canned, drained)

1 cup shredded Monterey Jack cheese

½ cup diced red bell pepper

½ cup red onion, finely diced

2 tablespoons fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

4 large flour tortillas

2 tablespoons olive oil (for grilling)

Lime wedges (for serving)

Optional: sour cream or salsa (for dipping)

Instructions
 

Prepare the Filling: In a large bowl, combine the shredded chicken, diced pineapple, Monterey Jack cheese, red bell pepper, red onion, cilantro, cumin, chili powder, garlic powder, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. On half of the tortilla, spoon a generous amount of the chicken and pineapple mixture. Fold the tortilla in half to cover the filling. Repeat with the remaining tortillas and filling.

      Preheat the Grill: Heat a grill pan or outdoor grill over medium heat. Drizzle with 1 tablespoon of olive oil.

        Grill the Quesadillas: Place the folded quesadillas on the grill. Cook for about 3-4 minutes on one side or until golden brown and crispy. Lightly brush or drizzle the top side with the remaining olive oil before flipping. Grill for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

          Slice and Serve: Remove the quesadillas from the grill and allow them to cool for a minute. Cut each quesadilla into wedges. Serve warm with lime wedges on the side, and optionally, with sour cream or salsa.
