For the Chicken Skewers:

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Skewers (wooden or metal)

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1 fresh jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Marinate the Chicken:

    - In a bowl, whisk together the olive oil, soy sauce, honey, garlic powder, smoked paprika, ground cumin, salt, and pepper.

      - Add the chicken cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes (1-2 hours for best flavor).

        Prepare the Salsa:

          - In a separate bowl, combine the diced mango, red onion, red bell pepper, jalapeño (if using), and cilantro.

            - Squeeze in the lime juice, and add salt and pepper to taste. Mix well and set aside for the flavors to meld.

              Skewer the Chicken:

                - If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

                  - Preheat your grill to medium-high heat.

                    - Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

                      Grill the Skewers:

                        - Place the skewers on the preheated grill. Cook for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F).

                          - Remove from the grill and let them rest for a few minutes.

                            Serve:
