Grilled Chicken with Peach BBQ Glaze

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and chopped

1 cup ketchup

1/4 cup brown sugar

1/4 cup apple cider vinegar

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for grilling

Fresh peach slices and chopped parsley for garnish (optional)

Prepare the Peach BBQ Glaze: In a medium saucepan, combine the chopped peaches, ketchup, brown sugar, apple cider vinegar, soy sauce, Dijon mustard, garlic powder, onion powder, and smoked paprika. Bring the mixture to a simmer over medium heat. Cook for 15-20 minutes, stirring occasionally, until the peaches are soft and the sauce thickens. Remove from heat and let it cool.

    Marinate the Chicken: Season the chicken breasts with salt and pepper. Place them in a resealable plastic bag or a shallow dish. Pour half of the peach BBQ glaze over the chicken, reserving the other half for basting and serving. Marinate in the refrigerator for at least 30 minutes or up to 2 hours.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). Brush the grill grates with olive oil to prevent sticking.

        Grill the Chicken: Remove the chicken from the marinade and let excess glaze drip off. Place the chicken on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Brush with the reserved peach BBQ glaze during the last few minutes of grilling for extra flavor.
