Grilled Corn & Avocado Salsa Tacos

Ingredients
  

2 ears of fresh corn

1 ripe avocado, diced

1 medium red onion, finely chopped

1 medium tomato, diced

1 jalapeño, seeds removed and finely chopped (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

8 small corn or flour tortillas

Olive oil for grilling

Sliced radishes for garnish (optional)

Crumbled feta cheese for topping (optional)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Brush the corn with a little olive oil and sprinkle with salt. Grill the corn for about 10-12 minutes, turning occasionally until it’s charred and cooked through. Remove from grill and let cool.

    Prepare the Salsa: Once the corn is cool enough to handle, slice the kernels off the cob. In a medium mixing bowl, combine the grilled corn, diced avocado, chopped red onion, diced tomato, jalapeño (if using), cilantro, lime juice, salt, and pepper. Gently fold to mix and be careful not to mash the avocado too much. Set aside.

      Warm the Tortillas: In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until they are pliable. Remove from skillet and keep warm in a clean kitchen towel.

        Assemble the Tacos: Place a generous scoop of the grilled corn and avocado salsa onto the center of each tortilla. Top with sliced radishes and crumbled feta cheese if desired.
