Grilled Eggplant & Hatch Sliders

Ingredients
  

2 medium eggplants, sliced into 1/2-inch rounds

3 tbsp olive oil

Salt and pepper, to taste

1 cup hatch green chiles, roasted and peeled (or 1 can of diced green chiles)

1 cup feta cheese, crumbled

1 tsp garlic powder

1 tsp smoked paprika

8 slider buns (preferably whole grain or brioche)

1 cup baby spinach or arugula

1/4 cup balsamic glaze (for drizzling)

Instructions
 

Prepare the Eggplant: Preheat your grill to medium-high heat. Brush both sides of each eggplant slice with olive oil, then season with salt and pepper.

    Grill the Eggplant: Place the eggplant slices on the grill grates. Grill for about 4-5 minutes on each side until tender and grill marks appear. Remove from the grill and set aside.

      Prepare the Filling: In a mixing bowl, combine the roasted hatch chiles, crumbled feta cheese, garlic powder, and smoked paprika. Mix well to combine.

        Assemble the Sliders: Lightly toast the slider buns on the grill for about 1-2 minutes. On the bottom half of each bun, add a layer of baby spinach, followed by a grilled eggplant slice, and then generously spoon the hatch chile and feta mixture on top.

          Finish and Serve: Place the top half of the slider bun over the filling. Drizzle with balsamic glaze before serving. Serve warm and enjoy your delightful combination of flavors!
