4 slices of thick sourdough bread

1 cup cream cheese, softened

2 tablespoons honey

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1 cup fresh peaches, pitted and sliced

1 cup pineapple, sliced

½ cup blueberries

¼ cup chopped fresh mint (optional)

2 tablespoons unsalted butter, softened (for grilling)

Powdered sugar (for dusting, optional)

Instructions
 

Prepare the Cream Cheese Spread: In a medium bowl, combine the softened cream cheese, honey, and vanilla extract. Mix until smooth and creamy. Set aside.

    Assemble the Sandwiches: Take two slices of sourdough bread and generously spread the cream cheese mixture on one side of each slice. Layer the fresh fruits (strawberries, peaches, pineapple, and blueberries) evenly over the cream cheese spread. If desired, sprinkle chopped mint over the fruits for added freshness.

      Top and Close: Place another slice of sourdough on top of the fruit layer, cream cheese side down, to create a sandwich. Repeat this process for the second sandwich.
