8 lamb chops, frenched

2 tablespoons olive oil

4 cloves garlic, minced

½ cup unsalted butter, softened

2 tablespoons fresh parsley, chopped

1 tablespoon fresh mint, chopped

1 teaspoon lemon zest

Salt, to taste

Freshly cracked black pepper, to taste

Marinate the Lamb Chops: In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and black pepper. Add the lamb chops and coat them evenly. Cover and let marinate in the refrigerator for at least 1 hour or up to overnight for maximum flavor.

    Prepare the Compound Butter: In a small bowl, mix softened butter with parsley, mint, lemon zest, salt, and pepper until well combined. Place the mixture on a sheet of parchment paper, roll it into a log shape, and twist the ends to seal. Chill in the refrigerator until firm, about 30 minutes.
