4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 tablespoon olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

1 cup arugula (for serving)

Crumbled feta cheese (optional, for garnish)

Chopped fresh basil (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine olive oil, balsamic vinegar, honey, minced garlic, thyme, salt, and pepper. Whisk together until well blended. Add the chicken breasts to the bowl, ensuring they are fully coated in the marinade. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat it over medium-high heat on the stove.

      Grill the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Place the chicken breasts on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from the grill and let it rest for 5 minutes.

        Grill the Peaches: While the chicken is resting, place the peach slices on the grill. Grill for about 2-3 minutes on each side, or until they are slightly charred and caramelized.

          Assemble the Dish: On a serving plate, arrange a bed of arugula. Slice the grilled chicken and fan it out on top of the arugula. Arrange the grilled peaches around the chicken.

            Garnish: If desired, sprinkle crumbled feta cheese on top and garnish with chopped fresh basil for an extra burst of flavor.
