4 ripe peaches, halved and pitted

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey

1 teaspoon cinnamon

1/4 teaspoon sea salt

1/2 cup crumbled feta cheese

1/4 cup fresh basil leaves, chopped (or 1 tablespoon dried basil)

1/4 cup toasted walnuts, roughly chopped (optional)

Instructions
 

Preheat the Grill: Start by preheating your grill to medium-high heat (about 400°F or 200°C).

    Prepare the Peaches: In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey, cinnamon, and sea salt. Add the peach halves and gently coat them with the mixture. Allow the peaches to marinate for about 10-15 minutes.

      Grill the Peaches: Once the grill is hot, place the peach halves cut-side down on the grill. Close the lid and grill for about 4-5 minutes, or until you see nice grill marks. Carefully flip the peaches and grill for another 3-4 minutes on the other side. They should be tender but not mushy.

        Plate the Dish: Remove the peaches from the grill and let them rest for a minute. Place the grilled peaches cut-side up on a serving platter.

          Add the Toppings: Sprinkle the crumbled feta cheese over the grilled peaches. Then, drizzle with any leftover marinade from the bowl. Finish with chopped fresh basil and, if desired, scatter the toasted walnuts on top for added crunch.
