Grilled Veggie & Mozzarella Sandwiches

Ingredients
  

2 large zucchini, sliced into ¼ inch rounds

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 medium red onion, sliced into rings

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

4 slices of rustic sourdough bread

8 oz fresh mozzarella cheese, sliced

Fresh basil leaves, for garnish

Pesto (store-bought or homemade), for spreading

Instructions
 

Prepare the Vegetables: In a large bowl, combine zucchini, bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper, tossing to coat evenly.

    Grill the Veggies: Preheat your grill (or a grill pan) over medium-high heat. Once hot, add the marinated veggies and grill for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from grill and set aside.

      Assemble the Sandwiches: On one side of each slice of sourdough bread, spread a layer of pesto. Layer the grilled vegetables evenly on two slices of bread, then top with sliced mozzarella. Place the remaining slices of bread, pesto side facing down, on top of the cheese.

        Grill the Sandwiches: Wipe down the grill grates with a little olive oil to prevent sticking. Place the sandwiches on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the mozzarella is melted. You may need to press down slightly with a spatula for even grilling.

          Finishing Touches: Once grilled to perfection, remove the sandwiches from the grill. Let them cool for a minute before slicing. Garnish with fresh basil leaves and serve immediately.
