1 lb frozen hash browns

1 medium onion, diced

2 cloves garlic, minced

5 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

3 green onions, chopped (for garnish)

1/2 cup crispy bacon bits (optional, for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for about 5 minutes, until translucent. Add the minced garlic and sauté for another minute until fragrant.

    Add Hash Browns: Stir in the frozen hash browns and cook for another 5 minutes, allowing them to fry slightly and pick up some flavor.

      Pour in the Broth: Add the vegetable or chicken broth to the pot, making sure all the hash browns are submerged. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, until the potatoes are tender.

        Blend for Creaminess: Using an immersion blender, blend the soup lightly to create a creamy texture, leaving some potato chunks for added texture. (Alternatively, you can transfer half of the soup to a blender, blend it, and then return it to the pot.)

          Add Cream and Cheese: Stir in the heavy cream, shredded cheddar cheese, dried thyme, paprika, and season with salt and pepper to taste. Heat through until the cheese is melted and everything is well combined.
