2 cups shredded rotisserie chicken

1 cup Hatch green chiles (canned or roasted)

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup chopped fresh cilantro (for garnish)

1 bag tortilla chips (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Combine Ingredients: In a large mixing bowl, combine the shredded chicken, Hatch green chiles, softened cream cheese, Monterey Jack cheese, cheddar cheese, sour cream, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix until well combined.

      Transfer to Baking Dish: Spread the mixture evenly into a greased 9x13-inch baking dish.

        Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden on top.

          Garnish: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro before serving.

            Serve: Serve warm with tortilla chips on the side for dipping.
