6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup diced hatch green chilies (roasted and peeled)

1/2 cup diced bell peppers (red or yellow)

1/4 cup chopped green onions (scallions)

1/4 teaspoon garlic powder

Salt and pepper to taste

1 cup cooked breakfast sausage or bacon bits (optional)

Cooking spray or olive oil for greasing muffin tin

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin with cooking spray or a light coating of olive oil.

    Mix the Eggs: In a large mixing bowl, crack the eggs and whisk them until well blended. Add the milk, garlic powder, salt, and pepper, and mix until fully combined.

      Incorporate the Fillings: Stir in the shredded cheddar cheese, diced hatch green chilies, diced bell peppers, and chopped green onions. If using, add the cooked breakfast sausage or bacon bits to the mixture.
