4 large flour tortillas (whole wheat or spinach for a healthier option)

1 pound ground turkey

1 cup Hatch green chilies (fresh or canned, diced)

1 medium onion (diced)

2 cloves garlic (minced)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

4 large eggs

1 cup shredded cheddar cheese (or a cheese of your choice)

½ cup fresh cilantro (chopped, for garnish)

Avocado slices (for serving)

Salsa (optional, for serving)

Instructions
 

Cook the Turkey Mixture: In a large skillet over medium heat, add ground turkey, diced onion, and minced garlic. Cook, breaking the turkey apart with a spatula, until the turkey is browned and cooked through, about 5-7 minutes.

    Add the Spices: Sprinkle in the ground cumin, smoked paprika, salt, and black pepper. Stir well to coat the turkey evenly with the spices. Add the diced Hatch green chilies and mix until fully incorporated. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat and set aside.

      Scramble the Eggs: In a separate bowl, beat the eggs until well combined. In another non-stick skillet, pour in the eggs and scramble over medium-low heat until softly set, about 3-4 minutes. Remove from heat when slightly runny, as they will continue to cook off the heat.

        Assemble the Wraps: Lay out a tortilla on a flat surface. Spoon a portion of the turkey mixture down the center of the tortilla, then follow with a spoonful of scrambled eggs and a sprinkle of shredded cheese.
