Ingredients
  

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced

1 cup broccoli florets

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

2 cups baby spinach

Juice of 1 lemon

Fresh parsley, chopped for garnish

Instructions
 

Prepare Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken pieces with salt, pepper, and paprika. Add the chicken to the skillet and cook for about 5-7 minutes or until browned and cooked through. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and minced garlic, sautéing for 2 minutes until fragrant. Stir in the sliced bell peppers, zucchini, and broccoli. Cook for about 5-7 minutes, or until the vegetables are just tender but still vibrant.

      Combine Chicken and Spinach: Return the cooked chicken to the skillet, adding the dried oregano and baby spinach. Stir everything together and cook for an additional 2-3 minutes, allowing the spinach to wilt.

        Add Lemon Juice: Pour the lemon juice over the skillet mixture, toss well to combine, and adjust the seasoning with salt and pepper if needed.

          Serve: Garnish with freshly chopped parsley and serve hot directly from the skillet, or transfer to a serving dish.
