2 cups rolled oats

1 cup almond flour

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup dark chocolate chips

1/4 cup chopped nuts (optional)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    In a large bowl, combine the rolled oats, almond flour, baking soda, salt, and cinnamon (if using). Mix well to ensure all dry ingredients are evenly distributed.

      In another bowl, whisk together the melted coconut oil, applesauce, honey (or maple syrup), and vanilla extract until smooth and well combined.

        Pour the wet ingredients into the dry ingredients and stir until fully incorporated. Fold in the dark chocolate chips and chopped nuts, ensuring they're evenly distributed throughout the mixture.

          Pour the mixture into the prepared baking pan and spread it out evenly with a spatula.

            Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and the center is set.

              Remove from the oven and allow to cool in the pan for about 10-15 minutes before lifting the bars out using the parchment paper. Let them cool completely on a wire rack.

                Once cooled, slice into 12 bars and enjoy or store them in an airtight container for up to a week.
