2 cups rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup dark chocolate chips (preferably 70% cocoa or higher)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a large mixing bowl, combine the rolled oats, almond flour, baking powder, salt, and cinnamon (if using). Mix until well combined.

      In another bowl, whisk together the honey, applesauce, melted coconut oil, and vanilla extract.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the dark chocolate chips.

          Spread the mixture evenly into the prepared baking pan, pressing it down firmly to ensure it holds together.

            Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Allow the bars to cool in the pan for about 10 minutes before lifting out using the parchment paper. Transfer to a wire rack to cool completely.

                Once cooled, slice into bars and enjoy! Store leftovers in an airtight container for up to a week.
