2 salmon fillets (6 oz each, skin-on)

2 tablespoons olive oil

1 teaspoon garlic, minced

1 tablespoon fresh lemon juice (about half a lemon)

Zest of 1 lemon

4 cups fresh spinach leaves

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Pinch of red pepper flakes (optional)

Lemon wedges, for serving

Prepare the Salmon: Pat the salmon fillets dry with a paper towel and season both sides generously with salt, pepper, and lemon zest.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering. Ensure your pan is hot enough; it should sizzle when you add the fish.

      Sear the Salmon: Place the salmon fillets skin-side down in the hot skillet. Cook for about 4-5 minutes without moving until the skin is crispy and the salmon cooks about halfway through.

        Flip the Salmon: Carefully flip the salmon using a spatula. Add the minced garlic and continue cooking for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork. If desired, drizzle lemon juice over the top while cooking.
