Healthy Sheet Pan Shrimp & Vegetables

Ingredients
  

1 lb large shrimp, peeled and deveined

2 cups broccoli florets

1 bell pepper (red or yellow), sliced

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Zest and juice of 1 lemon

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Lemon wedges for serving

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prep Vegetables: In a large bowl, combine the broccoli, bell pepper, zucchini, and cherry tomatoes. Drizzle with 1 tablespoon of olive oil, salt, pepper, oregano, and half the minced garlic (2 cloves). Toss until evenly coated.

      Prepare Shrimp: In another bowl, toss the shrimp with the remaining olive oil, lemon zest, lemon juice, smoked paprika, the remaining minced garlic, and a pinch of salt and pepper until well combined.

        Combine & Arrange: On a large sheet pan, spread the seasoned vegetables on one side and arrange the shrimp on the other side in a single layer.

          Roast: Place the sheet pan in the preheated oven and roast for about 15-20 minutes, or until the shrimp turn pink and opaque and the vegetables are tender but still slightly crisp.

            Finish & Serve: Once cooked, remove the sheet pan from the oven, sprinkle with fresh parsley, and serve immediately. Optionally, add lemon wedges on the side for extra zest.
