Healthy Snickers-Inspired Date Bars

1 cup Medjool dates, pitted and roughly chopped

1 cup raw almonds

1 cup raw cashews

1/2 cup natural peanut butter (or almond butter)

1/4 cup unsweetened cocoa powder

1/4 cup honey or maple syrup (for vegan option)

1/4 teaspoon sea salt

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (dairy-free if preferred)

1/4 cup unsweetened shredded coconut (for topping, optional)

Instructions
 

Prep the Base: In a food processor, combine the chopped dates, raw almonds, and cashews. Pulse until the mixture resembles a sticky dough. You may need to scrape down the sides a couple of times.

    Add Flavor: Add the peanut butter (or almond butter), cocoa powder, honey (or maple syrup), sea salt, and vanilla extract to the date mixture. Process again until all ingredients are fully combined and the mixture is smooth yet thick.

      Line the Pan: Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal later.

        Press the Mixture: Transfer the mixture into the prepared pan. Using your hands or a spatula, press it down evenly to form a solid base. Make sure it’s compact for easy slicing later.

          Chill: Place the pan in the refrigerator for about 30 minutes to allow the bars to firm up.

            Melt the Chocolate: While the mixture is chilling, melt the dark chocolate chips in a microwave-safe bowl or using a double boiler until smooth. If using a microwave, heat in 30-second intervals, stirring in between to prevent burning.

              Top the Bars: Once the date mixture is firm, remove it from the refrigerator and pour the melted chocolate over the top, spreading it evenly. If desired, sprinkle the unsweetened shredded coconut over the melted chocolate for added texture and flavor.

                Final Chill: Return the pan to the refrigerator for an additional 30 minutes to allow the chocolate to set.

                  Slice and Serve: Once the chocolate has hardened, lift the bars out of the pan using the parchment overhang. Cut into squares or rectangles. Store leftovers in an airtight container in the refrigerator for up to a week.
