Ingredients

8 chicken drumsticks

1/4 cup unsalted butter, softened

3 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 tablespoon lemon zest

1 tablespoon Dijon mustard

Salt and pepper, to taste

1 tablespoon olive oil

Optional: Fresh herbs for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Herb Butter: In a medium bowl, combine the softened butter, minced garlic, chopped rosemary, chopped thyme, lemon zest, Dijon mustard, salt, and pepper. Mix well until all the ingredients are fully integrated to form a herb-infused butter.

Pat Dry the Chicken: Rinse the chicken drumsticks under cold water and pat them dry with paper towels. This step is crucial for achieving crispy skin.

Season the Chicken: In a large bowl, toss the drumsticks with olive oil, ensuring they are evenly coated. Season generously with salt and pepper.

Apply the Herb Butter: Using your hands, carefully apply the herb butter mixture all over each drumstick, making sure to coat them evenly. Reserve a little butter for basting later.

Arrange in Baking Dish: Place the drumsticks in a single layer in a large baking dish or on a lined baking sheet.

Roast the Chicken: Bake in the preheated oven for 35–40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Baste the drumsticks with the reserved herb butter halfway through cooking for added flavor.

Serve: Once the drumsticks are golden and crispy, remove from the oven and let them rest for 5 minutes. Garnish with fresh herbs if desired, and serve hot.
