Herby Lemon Caprese Orzo Skillet

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

2 cups vegetable broth (or chicken broth)

1 cup fresh spinach leaves

1 cup mozzarella pearls (bocconcini)

Zest and juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Balsamic glaze for drizzling

Cook the Orzo: In a large skillet, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente. Once cooked, drain and set aside.

    Sauté the Aromatics: In the same skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional 1 minute until fragrant.

      Add the Tomatoes: Toss in the halved cherry tomatoes and cook for another 3-4 minutes until they begin to soften and release their juices.

        Combine Ingredients: Lower the heat and add the cooked orzo back into the skillet. Stir in the fresh spinach leaves, mozzarella pearls, lemon zest, and lemon juice. Sprinkle in the dried oregano, dried basil, and season with salt and pepper to taste. Cook, stirring gently, until the spinach wilts and everything is heated through, about 2-3 minutes.
