6 large eggs

1/2 cup egg whites

1 cup cooked lean sausage (chopped, turkey or chicken recommended)

1 cup baby spinach (chopped)

1/2 cup cherry tomatoes (halved)

1/2 cup bell peppers (diced, any color)

1/4 cup red onion (diced)

1 cup shredded low-fat cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil for cooking

Fresh herbs for garnish (optional, such as parsley or basil)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Ingredients: In a large mixing bowl, whisk together the eggs and egg whites until well combined. Season with garlic powder, paprika, salt, and pepper.

      Cook Sausage: In a large oven-safe skillet, heat a drizzle of olive oil over medium heat. Add the cooked sausage and sauté for 2-3 minutes until heated through.

        Sauté Vegetables: Add the red onion and bell peppers to the skillet. Cook for an additional 3-4 minutes until they start to soften. Then, stir in the chopped spinach and cherry tomatoes, cooking until the spinach is wilted.

          Combine Mixture: Pour the egg mixture evenly over the sautéed sausage and veggies in the skillet. Gently stir to combine. Sprinkle the shredded cheese evenly on top.

            Cook on Stovetop: Allow the frittata to cook on the stove for about 3-4 minutes, just until the edges start to set.

              Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and the top is slightly golden.

                Serve: Remove from the oven and let cool for a couple of minutes before slicing. Garnish with fresh herbs if desired and serve warm.
