Hobo Casserole Ground Beef Recipe

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

3 medium potatoes, sliced thin

1 cup carrots, sliced

1 cup green beans (fresh or frozen)

1 can (14.5 oz) diced tomatoes with juice

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon paprika

½ teaspoon dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

      Add chopped onion and minced garlic to the skillet with the beef. Sauté until the onions are translucent, about 5 minutes.

        In a large bowl, combine the sliced potatoes, carrots, and green beans. Mix well.

          Pour the ground beef mixture over the vegetables.

            Add diced tomatoes (with juice), beef broth, Worcestershire sauce, paprika, thyme, salt, and pepper to the same bowl. Stir until everything is well combined.

              Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.

                Cover the dish with aluminum foil and bake in the preheated oven for 1 hour.

                  After the hour is up, remove the foil, sprinkle cheddar cheese on top if using, and return to the oven for an additional 15 minutes until the cheese is melted and the potatoes are tender.

                    Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
