1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk (or milk with 1 teaspoon vinegar added)

1 ½ cups fresh or frozen blueberries

Zest of 1 lemon (optional)

Extra sugar for topping (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.

    Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the melted butter, eggs, vanilla extract, and buttermilk until smooth. If using, add the lemon zest for an extra zing.

        Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in Blueberries: Gently fold in the blueberries. If you’re using frozen blueberries, do this step while they are still frozen to prevent them from bleeding into the batter.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle a little extra sugar on top of each muffin for a crunchy sweet topping.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
