1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, melted and slightly cooled

2 large eggs

½ cup plain yogurt (or sour cream)

1 teaspoon vanilla extract

1 ½ cups fresh or frozen blueberries

For the Streusel Topping:

½ cup all-purpose flour

¼ cup brown sugar, packed

¼ teaspoon cinnamon

4 tablespoons unsalted butter, cold and cubed

¼ cup chopped nuts (optional, pecans or walnuts)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.

    Make the Muffin Batter: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. In another bowl, combine the melted butter, eggs, yogurt, and vanilla extract. Mix until smooth.

      Combine the Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined – do not overmix! Gently fold in the blueberries. If using frozen blueberries, no need to thaw; just fold them in carefully.

        Prepare the Streusel: In a small bowl, combine the flour, brown sugar, and cinnamon. Add the cold, cubed butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. If desired, fold in the chopped nuts for added crunch.

          Fill the Muffin Cups: Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full. Sprinkle the streusel topping generously on each muffin.

            Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean (a few crumbs are okay!).
