Ingredients

2 large sweet onions (like Vidalia)

1 cup all-purpose flour

1 cup cold beer (lager or ale work best)

1 tsp baking powder

1 tsp garlic powder

1 tsp paprika

½ tsp cayenne pepper (optional for heat)

¼ tsp salt

½ tsp black pepper

Oil for frying (vegetable or canola)

Instructions

Prepare the Onions: Peel the onions and slice them into approximately ½-inch thick rings. Carefully separate the rings and set aside in a bowl.

Make the Batter: In a large mixing bowl, whisk together the all-purpose flour, baking powder, garlic powder, paprika, cayenne pepper (if using), salt, and black pepper. Gradually pour in the cold beer while whisking until a smooth batter forms. The consistency should be thick enough to coat the onions.

Heat the Oil: In a deep skillet, heat about 2 inches of oil over medium-high heat. You can test if the oil is ready by dropping a small amount of batter into the oil; it should sizzle immediately.

Batter the Onion Rings: Dip each onion ring into the batter, ensuring it is fully coated. Allow excess batter to drip off.

Fry the Rings: Carefully drop the coated onion rings into the hot oil, being sure not to overcrowd the pan. Fry for about 3-4 minutes on one side until golden brown, then flip and fry for another 2-3 minutes until crispy.

Drain and Season: Once cooked, remove the onion rings with a slotted spoon and place them on paper towels to drain excess oil. Lightly sprinkle with salt while they are still hot.

Serve: Enjoy your crispy beer-battered onion rings hot, alongside your favorite dipping sauces like ranch, ketchup, or spicy mayo!
