1 ½ cups warm water (110°F to 115°F)

2 tablespoons granulated sugar

2 ¼ teaspoons active dry yeast (1 packet)

4 cups all-purpose flour

1 teaspoon salt

⅓ cup baking soda

1 large egg (for egg wash)

Coarse sea salt (for sprinkling)

Optional: melted butter (for brushing after baking)

Instructions
 

Activate the Yeast: In a mixing bowl, combine the warm water and sugar. Sprinkle the yeast over the water and let it sit for about 5-10 minutes, or until it becomes frothy.

    Make the Dough: In a large mixing bowl, combine the flour and salt. Add the frothy yeast mixture to the flour, stirring until a dough begins to form. Transfer it to a lightly floured surface and knead the dough for about 5-7 minutes, until it's smooth and elastic.

      First Rise: Place the kneaded dough in a greased bowl, cover it with plastic wrap or a damp cloth, and let it rise in a warm area for about 1 hour, or until it doubles in size.

        Preheat the Oven: Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper.

          Shape the Pretzels: Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, about 20-24 inches long. Create a U-shape with the rope, then twist the ends around each other twice and fold them down to form the pretzel shape.

            Baking Soda Bath: In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each pretzel into the boiling water (you can do 2-3 at a time) and let them boil for about 30 seconds. Use a slotted spoon to remove them and place them back on the baking sheets.

              Egg Wash: In a small bowl, whisk the egg. Brush the egg wash over each pretzel and sprinkle with coarse sea salt.

                Bake: Bake in the preheated oven for 12-15 minutes, or until the pretzels are golden brown.
