Ingredients

1 box (8.5 oz) cornbread mix

1/2 cup honey

1/4 cup unsalted butter, melted

1/2 cup whole milk

2 large eggs

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup shredded cheddar cheese

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh thyme or parsley for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, honey, milk, and eggs until well combined.

Combine Dry Ingredients: In another bowl, mix the cornbread mix, baking powder, salt, and pepper. Make sure there are no lumps in the dry mixture.

Combine and Stir: Gradually fold the dry ingredient mixture into the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

Add Corn and Cheese: Gently fold in the corn kernels and shredded cheddar cheese into the batter, ensuring they are evenly distributed.

Transfer to Baking Dish: Pour the batter into the prepared baking dish, spreading it out evenly.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the casserole from the oven and allow it to cool for about 10 minutes. This will make it easier to cut into squares.

Garnish: If desired, sprinkle fresh thyme or parsley on top for an extra touch of flavor and color.

Enjoy: Serve warm as a side dish, or enjoy it as a comforting main alongside your favorite dishes!
