1.5 lbs chicken thighs (boneless, skinless)

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

4 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 tablespoon rice vinegar (or apple cider vinegar)

1 tablespoon sesame oil

1 teaspoon cornstarch (mixed with 1 tablespoon water)

2 tablespoons green onions (sliced, for garnish)

Sesame seeds (for garnish)

Salt and pepper (to taste)

Cooked rice (for serving)

Marinate the Chicken: In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and a pinch of salt and pepper. Whisk until well combined. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, or ideally for 2 hours.

    Cook the Chicken: Heat a large skillet or pan over medium-high heat. Once hot, add the marinated chicken thighs (reserve the marinade for later). Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should be 165°F/75°C).

      Make the Sauce: Remove the chicken from the skillet and set aside. In the same pan, add the reserved marinade. Bring it to a simmer, then stir in the cornstarch slurry (cornstarch mixed with water) and cook for an additional 2-3 minutes until the sauce thickens. Taste and adjust seasoning if necessary.

        Coat the Chicken: Once the sauce has thickened, return the chicken thighs to the skillet, flipping to coat them evenly in the sauce. Cook for an additional minute to heat through.
