Honey Garlic Chicken Meatball Bowls

1 lb ground chicken

1/4 cup breadcrumbs (preferably Panko)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 egg

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

For the Honey Garlic Sauce:

1/3 cup honey

1/3 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch

1 tablespoon water

For the Bowls:

2 cups cooked rice (white, brown, or cauliflower rice)

1 cup steamed broccoli

1 red bell pepper, sliced

1 green onion, sliced (for garnish)

Sesame seeds (for garnish)

Prepare the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, onion powder, salt, and black pepper. Mix until well combined. Form into meatballs, about the size of a golf ball (approximately 1.5 inches in diameter).

    Cook the Meatballs: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place meatballs on the baking sheet, spacing them evenly. Bake for 20-25 minutes until cooked through and slightly golden.

      Make the Honey Garlic Sauce: In a saucepan over medium heat, whisk together honey, soy sauce, minced garlic, and ginger. In a small bowl, mix cornstarch and water until smooth. Add this mixture to the saucepan. Continue to cook, stirring until the sauce thickens, about 3-5 minutes. Remove from heat.
