1 lb (450g) young carrots, preferably rainbow-colored

3 tablespoons unsalted butter

2 tablespoons honey

2 tablespoons olive oil

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Optional: 1 tablespoon balsamic vinegar for added depth

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: Wash and peel the carrots. If they are large, consider cutting them in half lengthwise for shorter cooking time. Place the carrots on a cutting board and make thin, even slices down the length of each carrot, stopping about 1/4 inch from the bottom (this creates the Hasselback effect).

      Make the Honey Glaze: In a small saucepan over medium heat, melt the butter. Once melted, add the honey, olive oil, chopped thyme, garlic powder, salt, and pepper.
