4 salmon fillets (6 oz each)

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

2 tablespoons soy sauce

1 teaspoon minced garlic

1 teaspoon fresh ginger, grated (optional)

Salt and pepper to taste

Fresh herbs for garnish (such as parsley or dill)

Lemon wedges for serving

Prepare the Marinade: In a bowl, whisk together the Dijon mustard, honey, olive oil, soy sauce, minced garlic, and grated ginger (if using) until smooth. Set aside about 2 tablespoons of this mixture for glazing later.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the remaining honey mustard mixture over the salmon, ensuring each piece is well-coated. Season with salt and pepper. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to make cleanup easier.

        Bake the Salmon: Remove the salmon from the marinade and place it skin-side down on the prepared baking sheet. Bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and is cooked to your desired level of doneness.
