Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup shredded sharp cheddar cheese

½ cup granulated sugar

2 large eggs

1 cup buttermilk

⅓ cup melted butter (plus extra for greasing)

¼ cup hot honey (store-bought or homemade)

1-2 fresh jalapeños, finely chopped (optional, for added spice)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease an 8-inch square baking dish or a cast-iron skillet with butter.

Combine Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt until well combined.

Add Cheese and Sugar: Gently fold in the shredded cheddar cheese and granulated sugar, ensuring the cheese is evenly distributed throughout the dry ingredients.

Mix Wet Ingredients: In a separate bowl, whisk together the eggs, buttermilk, melted butter, and hot honey until smooth. If you’re adding jalapeños for extra spice, include them in this wet mixture.

Combine Ingredients: Pour the wet ingredients into the dry ingredients, using a spatula to gently fold until just combined. Be careful not to overmix; a few lumps are okay!

Transfer to Baking Dish: Pour the cornbread batter into the prepared baking dish or skillet, spreading it evenly with a spatula.

Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Drizzle: Once baked, remove from the oven and let it cool for a few minutes. Drizzle additional hot honey over the warm cornbread for an extra layer of sweetness and spice.

Serve: Cut into squares or wedges and serve warm with butter or extra hot honey on the side. Enjoy the delightful sweet, spicy, and savory flavors!
