Ingredients

20 large cremini or button mushrooms

1 cup cream cheese, softened

1 cup shredded Parmesan cheese

1/4 cup breadcrumbs

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped (plus more for garnish)

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a baking sheet or line it with parchment paper.

Gently clean the mushrooms with a damp cloth and remove the stems. Set the caps aside and finely chop the stems.

In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems and minced garlic, sautéing for about 3-4 minutes until tender and fragrant.

In a mixing bowl, combine the sautéed mushroom mixture, cream cheese, Parmesan cheese, breadcrumbs, parsley, Italian seasoning, salt, and black pepper. Mix until well-combined and creamy.

Using a spoon, generously fill each mushroom cap with the cheese mixture. Place the stuffed mushrooms on the prepared baking sheet.

Bake in the preheated oven for 20-25 minutes, or until the tops are golden and the mushrooms are tender.

Remove from the oven and let cool slightly. Garnish with additional chopped parsley before serving.
