8 oz fettuccine pasta

2 tbsp olive oil

3 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup fresh spinach

Salt and black pepper, to taste

Zest of 1 lemon

Juice of 1/2 lemon

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce Base: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant—be careful not to burn the garlic!

      Make it Creamy: Pour in the heavy cream, stirring well to combine. Cook for 2-3 minutes until the cream slightly thickens.

        Cheese It Up: Add the grated Parmesan cheese, mixing until melted and smooth. If the sauce is too thick, add some reserved pasta water, a little at a time, until you reach desired consistency.

          Add the Greens: Stir in the fresh spinach to the sauce, cooking until wilted, about 2 minutes. Season with salt, black pepper, lemon zest, and lemon juice, adjusting flavors to your liking.

            Combine with Pasta: Add the cooked fettuccine to the skillet, tossing gently to coat all the pasta with the cream sauce.

              Serve: Plate the pasta and garnish with fresh basil or parsley. Optionally, top with extra Parmesan cheese and a sprinkle of red pepper flakes for added kick.
