Ingredients

12 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

5 cups fresh spinach

1 cup heavy cream

1 cup grated Parmesan cheese

½ teaspoon black pepper

½ teaspoon salt (or to taste)

¼ teaspoon nutmeg

2 tablespoons chopped fresh parsley (for garnish)

Optional: red pepper flakes for heat

Instructions

Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Add Spinach: Toss in the fresh spinach and cook until wilted, about 3-4 minutes.

Create the Cream Sauce: Pour in the heavy cream, stirring to combine. Bring the mixture to a gentle simmer. Gradually whisk in the Parmesan cheese until melted and the sauce is smooth.

Season: Stir in the black pepper, salt, and nutmeg, adjusting the seasonings to your taste.

Combine Pasta and Sauce: Add the drained fettuccine to the skillet with the sauce. Toss everything together, adding a little reserved pasta water if needed to achieve the desired creaminess.

Garnish and Serve: Serve hot, garnished with fresh parsley and a sprinkle of red pepper flakes if desired for a kick.
