Instant Pot Chicken Alfredo Pasta

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

Salt and pepper to taste

4 cloves garlic, minced

1 teaspoon Italian seasoning

3 cups chicken broth

12 oz (340g) fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Chicken: Turn the Instant Pot to the Sauté setting and add the olive oil. Once hot, add the chicken pieces. Season them with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the pot and set aside.

    Sauté Garlic: In the same pot, add minced garlic and sauté for about 1 minute until fragrant. Do not let it burn.

      Deglaze: Pour in 1 cup of chicken broth to deglaze the pot, scraping up any browned bits from the bottom. This will add flavor to your dish.

        Add Pasta & Broth: Place the fettuccine noodles into the pot, gently pushing them down to submerge them. Then, add the remaining chicken broth on top and return the cooked chicken to the pot.

          Pressure Cook: Seal the Instant Pot lid and set it to Manual or Pressure Cook for 8 minutes on high pressure.

            Release Pressure: Once the cooking time is complete, perform a quick release by carefully turning the pressure valve to venting.

              Stir in Cream & Cheese: Open the lid and stir in the heavy cream and Parmesan cheese until the cheese has melted and the sauce is creamy. If the sauce is too thick, feel free to add a bit more broth until your desired consistency is reached.

                Garnish & Serve: Ladle the creamy chicken Alfredo pasta into bowls, garnish with fresh parsley, and additional Parmesan cheese, if desired. Enjoy your delicious meal!
