4 oz Irish bacon, diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable or chicken broth

2 cups green cabbage, chopped

1 cup carrots, diced

1 tsp thyme (fresh or dried)

1 tsp black pepper

1 tsp salt (to taste)

2 tbsp olive oil

½ cup heavy cream (optional, for richness)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Bacon: In a large pot, heat the olive oil over medium heat. Add the diced Irish bacon and sauté for about 5-7 minutes until crispy and golden. Remove the bacon and set it aside, leaving the rendered fat in the pot.

    Cook Aromatics: In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes, or until the onion becomes translucent and fragrant.

      Add Vegetables: Stir in the diced potatoes, carrots, and chopped cabbage. Cook for another 5 minutes, stirring occasionally to combine the flavors.

        Pour in Broth: Add the vegetable or chicken broth to the pot. Increase the heat until it reaches a simmer. Once simmering, reduce the heat to low and add the thyme, black pepper, and salt. Cover and let it cook for about 20-25 minutes, or until the potatoes and carrots are tender.

          Blend (Optional): For a creamier soup, use an immersion blender to blend about half of the soup in the pot. You can also transfer a portion to a blender and pulse until desired consistency is reached. If you prefer a chunkier texture, skip this step.

            Add Cream: If you desire a richer flavor, stir in the heavy cream at this stage and let the soup simmer for another 5 minutes. Return the crispy bacon to the pot and mix well.

              Taste and Adjust: Taste the soup and adjust the seasoning with more salt or pepper if needed.

                Garnish and Serve: Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread on the side.
