2 boneless, skinless chicken breasts

Salt and freshly cracked black pepper, to taste

2 tablespoons olive oil

4 slices of fresh mozzarella cheese

1 large ripe tomato, sliced

Fresh basil leaves (about 8-10)

1 tablespoon balsamic glaze (more for drizzling)

4 ciabatta rolls or panini bread

2 tablespoons pesto (store-bought or homemade)

1 tablespoon butter, softened (for grilling)

Prepare the Chicken: Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat, cover, and let them rest for 5 minutes before slicing into thin strips.

    Assemble the Panini: Slice the ciabatta rolls in half. On the bottom half of each roll, spread ½ tablespoon of pesto. Layer the sliced chicken, fresh mozzarella, tomato slices, and basil leaves generously. Drizzle with balsamic glaze for a touch of sweetness.
